Knife Description:
Use the Larding Needle in order to insert strips of fat in lean meat before cooking so that the meat will be more moist and tender. This is especially helpful with big joints of meats such as venison, which tend to dry out during roasting.
The technique is to take a long, thin strip of some kind of lard--usually bacon, or fat from pork--and insert it into the hollow cavity of the needle, and then use the needle to thread the fat through the meat.
The Wusthof Larding Needle with Flap has as a sharp, pointed tip and a hollow body. It measures 20.3 cm is manufactured from high quality Stainless Steel.
