About Global:
 
The first GLOBAL knives were designed in 1985 by Komin Yamada whose remit was to develop a range of knives which was truly new and revolutionary, harnessing the best materials available and the most modern design concepts.
 
From very modest beginnings GLOBAL has developed into one of the success stories of the 1990's. Still crafted by hand in Yoshikin's factory in Niigata to the most exacting standards, they are sold in more than 65 countries around the world.
 
Product Description:
 
The Global Sai Collection follows in the same tradition as the Global Classic knives and are made in the same fashion by skilled Japanese craftsmen in Yoshikin's factory. An entirely new handle design incorporates an ergonomic thumb-rest to ease the cutting motion. The blades are crafted from special Cromova 18 Sanso material, comprising three layers of Stainless Steel.

The central layer with cutting edge is of Cromova 18 Stainless Steel, hardened to Rockwell 58-59 degrees and honed to a fine edge to give awesome cutting performance. This is sandwiched between two layers of softer SUS410 Stainless Steel material, which helps to protect the blade against chipping rusting and staining.

A new, hammered finish is applied to the sides of the blade. This is not purely decorative. The air pockets resulting from this result in a better release of food being cut, giving the blade non-stick properties.

The Global SAI-03 Santoku Knife is a full sized Santoku, which can literally do anything, but is particularly well suited for chopping meat and vegetables. The flat, deep and powerful blade of this Japanese knife makes it brilliant for Western style cooking. Good for cutting up meat, fish and lots of heavy root vegetables, such as sweet potato, squashes and celeriac.
 
Santoku knives have become incredibly popular recently, and a great alternative to a cook’s/ chef’s knife.
 
Other unique Global Knife features include its smooth contours and seamless construction which eliminates food and dirt traps offering the ultimate in safety and hygiene. The acute 15-degree angle cutting edge provides unsurpassed performance and superior edge retention.
 
The Handle is one of the most distinctive features of Global knives. Sort of their trademark design. The handle is metal and the knife is one solid piece. To improve the Grip, the handle is textured with multiple circular recessions which show up as black dots in the handle.
