Knife Description:
 
The Wüsthof Ikon Chinese Chef's Knife 18 cm looks like a Chinese cleaver, but it most certainly isn't! The knife is thinner than a cleaver and can only be used to finely chop herbs and vegetables. Because of the height of the blade you can easily guide the knife with your fingers as you cut vegetables and herbs, and you can also immediately scoop them up.
 
The skillfully honed by hand Blades of the Classic Ikon Series are incredibly sharp and are easily resharpened. Completely buffed and polished by hand, the new Wusthof PEtec edge is fully forged out of a single piece of Chromium-Molybdenum-Vanadium Steel and stays sharp up to 30 percent longer than other knives.
 
Another advantage of this blade is the crop. It doesn’t extend all the way to the edge but does separate the handle from the blade. As such you not only keep your fingers safe, you can also use the entire edge. Also great when you want to sharpen the knife.
 
The Wusthof Ikon Range was designed to marry style and functionality from Handle to Tip. The 2/3rd bolster allows you to sharpen the whole length of the blade. To promote greater control, the balanced bolster contributes to safety and strength.
 
The handle is finished off with a traditional triple rivet and exposed full tang. Each knife is carefully weighted to ensure perfect balance in the hand.
 
The Set includes Wusthof’s innovative 4348 knife sharpener for left and right-handed use. Two levels are available for sharpening knives, depending on how much cutting performance has been lost. The first level, "Coarse", is recommended for when the knife is blunt. The second level, "Fine", is suitable both for fine sharpening following on from the first level or for regular resharpening of the blade. The ceramic slats grind the blade and the knife regains its original sharpness. Knives with a serrated edge should only be sharpened using the second level in order to remove any burrs that have developed. The traditional company based in Solingen, Germany, has designed the knife sharpener to make it easy for anyone, even without experience, to sharpen knives.
