Chinese Cleavers may look similar to Western cleavers but they share more similarities with chef’s knives. Their blades are wide like cleavers, but much thinner, making them better suited for chopping, slicing and mincing. The wide blade keeps the fingers well off the cutting surface and also serves as a scoop to transfer food to a wok. A slight curvature can be found in the blade to provide a rocking motion for chopping similar to a Chef’s Knife. Such a Cleaver not only chops, slices and minces. It also smashes, mashes, scrapes and scoops.
Victorinox’s Black Fibrox® Butcher’s Cleaver features a laser tested edge with world renowned sharpness designed to come down swiftly on to meat, fish and vegetables.
The Victorinox Fibrox Cleaver comes with a 18.5 cm High-Carbon Stainless Steel Blade which provides maximum Sharpness and Edge Retention. The Blade is conical ground lengthwise and crosswise for minimal Resistance while Cutting and Laser Tested to ensure optimum Cutting Power
The patented black Fibrox® Handle is textured and slip-resistant when wet. The edge is conically ground length and crosswise to create a wider break point, which reduces the risk of blade fracturing and decreases resistance when cutting.
The non-slip Fibrox handles can be sterilized at up to 150 degrees Celsius, which makes them ideal for use in the kitchens of hotels, restaurants, catering companies and hospitals.
