The Shun Classic Santoku Knife has a small pointed blade well suited for precise tasks such as trimming and peeling fruit and vegetables.

The Kai Shun Classic Santoku
Knife is a traditional Japanese styled, all purpose knife. The straight blade makes this knife perfect for chopping.
 
A Santoku is a Japanese All-purpose Kitchen Knife. Like a Chefs Knife, the santoku is used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, the name refers either to the three types of foods it works well with—vegetables, proteins, and fruit—or for the three types of cuts at which it excels—slicing, dicing, and chopping.
 
The durable PakkaWood Handle resists moisture and has a D shape, to sit comfortably in the hand and adds balance and beauty to the knife, whether in the hand or at rest in the block.
