The Medium (800) Grit Ceramic Element should be used in a Benchstone type fashion, or like a Butcher Steel. The Ceramic Benchstone is harder than Steel, will never wear out, and can be used often as the primary Sharpening Element of your QuadSharp™. The Ceramic Benchstone is also tapered for sharpening serrated knives.
