Staying true to its Asian origins, the Shun Classic Pro collection features the classic single-bevel blades and styling that define traditional Japanese cutlery.
 
In Japanese, "Yanagiba" means "willow blade" and the yanagiba is, quite simply, an ideal slicing knife. Designed to be pulled gently through the food, and cut paper-thin slices, this precise, single-bevel blade reduces loss of the natural juices and creates the cleanest cuts imaginable.
 
The traditional single-bevel, scalpel-like edge is the favored style for preparing Asian cuisine, including Sushi and Sashimi. It’s the right knife whether you want to carve paper-thin or thick and juicy slices.
 
The blade is constructed of high-carbon VG-10 Stainless Steel designed for maximum strength and edge retention. The exceedingly sharp cutting edge is long lasting and easy to maintain. The mirror-polished, ultra sharp cutting edge ensures the blade glides through delicate foods without bruising or tearing to retain maximum flavour.
 
Graffiti etching on the blade’s sides give this collection an elegant, contemporary look. An extra-wide “shinogi,” or blade bevel, makes sharpening with whetstone nearly effortless.
 
The Premium D-shaped PakkaWood handles nestle comfortably into the curves of the palm, offering control and a secure grip and adds balance and beauty to the knife, whether in the hand or at rest in the block.The durable PakkaWood Handle resists moisture.
