The Coho Filleting Knife at 34 cms overall is three inches longer than its smaller cousin, the Steelheader Filleting Knife.
Designed for medium and larger sized fish, the Coho sports a full 21.5 cm cutting edge. The knife has a semi-flexible blade, is razor sharp and will stay that way fish after fish.
The premium grade 440C Stainless Steel Blade has a Rockwell hardness of 57-59 and holds a very sharp edge. Hollow ground and razor sharp, your fish will filleted beautifully with this knife.
