Sharpening Steel Description:

A Professional Sharpening Steel with a square section blade in High Carbon Chrome Vanadium Steel, hardened to 64° Rockwell C and Hard Chrome plated.
 
The square section enables more of the knife edge to stay in contact with the Steel.
 
There are three blade sizes to choose from and a variety of precision cuts to meet the specific requirements of different food processing professionals.  
 
Our Dual Cut 6 is often sold on this Steel - two surfaces feature our Fine Cut (H3) and two surfaces are Polished (H7) so that a knife can be both sharpened and honed with the same Steel.
 
This Steel is fitted with a sterilisable, non-absorbent Polypropylene Handle with a 1.5" – 4 cm square guard and stainless steel hanging ring.
 
Handles are available in all of the food hygiene colours to help avoid cross contamination in professional kitchens.
