Kanetsune Kengata Chef's Knife, 180 mm made out of Laminated VG-10 Stainless Steel.
The construction of the Blade is so called "Sanmai" which means "three layers" in English. The Core Material of the blade is VG-10 Stainless Steel which is sandwiched between 2 Layers of 410 Stainless Steel.
Kengata is a smaller version of the Gyuto knife and is used for cutting and slicing meats, fish, and vegetables.
